Hello, I read somewhere to put the seeds into water, if they float, you better forget them, if they sink you can put them in ground, chances are bigger. Good luk, maple is my favourite tree in bonsai, i hope you get it. Keep me inform please.

I've had some luck recently with germinating japenese maples (i also live in NSW Australia so the same climate) you'll need to trick them into thinking they are in the ground over winter (but control the conditions yourself).
Break the wings off and soak your seeds overnight, the seeds will likely stay on the surface but after 24 hours or so they will sink to the bottom. This will soften the husk of the seed allowing the process to begin
Next step grab a container (I used a recycled peanut butter jar) fill the bottom up with cotten wool balls, add water to just below the top of the cotten wool (wet but not submerged) add your soaked seeds to the top maybe gently press them on top and then close the container. Then chuck them in the fridge! this will trick them into thinking its winter, genrally cold and dark and wet, just the way they want it.
Next part is wait, being a tree they will take a while. I had mine in there about 3 months before they started sprouting. However thats a short time to wait considering in nature they usually take two winters to get going out in the real world.
You might want to time it in line with winter, that way your seedlings wont die off with the cold, and gives them a good year until they might have to deal with it. Anyway, hope i've helped. I've used this on other tree seeds as well seems to do the trick.
